Baby it's cold outside! This is a great time of year to stay home and enjoy a good glass of red wine. Although there many wonderful options in bold red wine, especially Ribera del Duero from Spain and the wines of Bordeaux and Rhone in France, this column will focus on Napa Valley Cabernet Sauvignon from California.
Viticulture
Cabernet Sauvignon is king in Napa. While (red), plantations of vine Zinfandel Cabernet just outnumbered, cabernet sauvignon is that Napa Valley has an international reputation as a world class wine region.
It are several reasons why wine producers in Napa produce extraordinary wines. Cabernet is known for her great style, structure and potential for long aging. Tannins are the reason behind all this, and are in the dark skin of black grapes cabernet sauvignon, seeds and stems.
Over the years, the vintners of Napa have become better able to determine when the harvest on the basis of the maturity of the grape, including the amount of juice, sugar, acidity and tannins. Oak barrels from 18 to 24 months is to soften the wine and help the discussion to create a balanced, delicious wine. Contribute toasted oak, vanilla and earth notes. Good cabernets are produced lush and rich, with complex aromas of black fruits (blackberries, cassis and plum) and notes of cedar, leather and cassis.
Plantation Napa Cabernet grape originally grown in the valley, as the soil water retention is rich in nutrients and good. Popular American Viticultural Areas (AVAS) include Oakville and Rutherford.
Pairing
Tannins can join protein, which increases the flavor of food and aid digestion. Time softens the tannins. A mature wine is softer and considered more intelligent. As the wine matures, the tannins bind molecules to form larger particles. They sink to the bottom of the bottle, and are called sediment.
Cabernet decanting before drinking is useful. Decanting the wine means slowly and carefully pour the wine in the original bottle in a large container glass or pot. The sediment is generally off last, sediment and the person settling wine should be attentive and stop pouring when it is visible. It is best to decant at least one or two hours before serving. Decanting also aerates the wine, mix wine with oxygen to help open the wine. This allows for better fruit flavor, complexity and finish of the wine.
A light and fruity style Cabernet pairs well with chicken salad, steak sandwiches and prosciutto. Cabernet average weight surcharge based broth soups and gnocchi with mushrooms, or pasta with marinara sauce, pizza and seasoned, grilled chicken. Full-body cabernets naturally go with the high price as rib roast, barbecue, blue cheese, sharp cheddar cheese and chocolate desserts. Reliant quintessential Cabernet Sauvignon is the meat. Young, tannic cabernets pair well with steaks. A cabernet mature (more 5 years) works well with beef tenderloin.
