– Place between two sheets of plastic and pound to flatten to 1/4-inch thickness.
– In a resealable plastic bag, combine cornmeal and garlic salt.
– Add the chicken bag close and mix well.
– In a large nonstick skillet, heat the oil.
– Cook chicken in oil heated for 2 minutes each side or until lightly browned.
– Remove chicken from skillet and place in a dish shallow.
– Place half of avocado slices over chicken and sprinkle evenly with shredded cheese.
– Bake at 350 degrees F for 15 minutes or until chicken is cooked and cheese is melted.
– Place each chicken breast on a slice of toast.
– Cover with the remaining avocado slices.
– In a small bowl, combine yogurt and pepper and serve with chicken.
